Description / Overview

The Imperial PCVG-2 Turbo-Flow gas convection oven utilizes fans to evenly distribute hot air within its two separate chambers, using waves of warm air to cook food. Chefs have the ability to prepare two different types of products at once, as each chamber has its own control settings. Whether cooking fragile dishes or high-volume items, the fan motors can be adjusted from high to low speed.

Constructed from stainless steel, the Imperial PCVG-2 commercial convection oven is highly resistant to rust and corrosion, as well as damage from everyday usage. The ovens feature porcelainized interiors that are easy to clean, though regular maintenance is recommended to prevent potential cracks. Each unit is supported by 6-inch legs, lifting it off the floor for improved stability.

About the Manufacturer

Imperial was founded in 1957 in Los Angeles, California by Pete V. Spenuzza, who began by building broilers and griddles for local steakhouses. His son, Peter Spenuzza, later acquired the company in 1980 and continues to lead it as CEO. Imperial relocated to a 100,000-square-foot facility in Corona, California in 2004, which remains its headquarters and manufacturing site today. Imperial has remained family-owned and independently operated, continuing to manufacture its equipment domestically in the United States. Its product line covers commercial ranges (including its Elements, Pro, and Spec series), gas and electric fryers and filtration systems, countertop equipment such as griddles, hotplates, and broilers, cheesemelters and salamanders, deck, convection, and combination ovens, pasta cookers and rethermalizers, and specialty equipment including wok ranges and teppanyaki griddles — with custom configurations built for specific cuisines such as Japanese, Chinese, and Mexican foodservice operations.
